Benjamin Luzuy is a passionate ambassador of local produce, he loves to unite the best ingredients of the land and the lake and to confront the gustatory strength which only true “terroir” has to offer. He defines himself as the link between the local producers and his clientele. His generous spontaneity leads him to meet with the producers with whom he has forged close ties.
How to present to you the “citrus fruit” producer, Niels Rodin, in just a few lines……he is a multi-passionate person who loves the land, good food, history…..
His is a small craft enterprise in the heart of the Vaudois Riviera which was born from the love of this fruit and which is constantly searching for new citrus varieties to propose to you. Some are just not well-known or even forgotten by the general public, while others are simply part of other cultures….Yuzu and kabosu from Japan, cédrat from France, citron caviar, Buddha’s hand citron from China and Japan, mandarin, kumquat, bergamot from Sicily and Calabria, kaffir (or makrut) lime from Southeast Asia. More than 80 rare varieties are cultivated by this citrus specialist in his greenhouse in Borex.
A large part of his harvest is reserved for chefs, while another part is transformed into juice, oils and condiments. Niels has the desire to develop his production and in parallel is looking into a project with “Urban Farming, in partnership with the canton of Fribourg.

In 1947, Paul and Edouard decided to enhance the value of the product of their vines by bottling and selling their first bottles.
Today, the domaine produces 18 different types of wine, such as gewürztraminer, mondeuse and anchellota. The family has always stayed faithful to the spirit of authenticity and to its quest for quality in order to produce wines of character.

Le Chef will look for seasonal produce at the Local farm “La Ferme des Pralies”. Gabriella Salvadori cultive naturally vegetables, fruits, flowers, herbs. Patience, but in a few months you will love her heirloom tomatoes ... Crimean Black, Pineapple, Green Zebra, Horn Andes ... not to mention the different eggplants and peppers.
